A taste of home... Cincinnati Chili 🍜 🏙️
Both Lindsey and Keith love Cincinnati Chili. Traditionally, this style of chili is made with ground beef. However, when our friend Randy last visited us, he mentioned that he made a roast with a packet of Cincinnati Chili seasoning. He said that it was incredible!

So, we were excited to try for ourselves. Lindsey purchased a roast, added the seasoning, and let it slow-cook in the crockpot. The meat was super tender and flavorful. It tasted like Cincinnati Chili but had the mouth feel of pulled pork. It was quite delicious, and we will be adding this to our recipe list.
Lindsey had PRP therapy on her knee 💉 👨⚕️
Earlier this year, Lindsey had a minor fall while skiing. She didn't think too much of it but noticed some lingering pain and what felt like some instability in her left knee. She thought it would get better over time, but unfortunately, it did not.

So, she visited Keith's sports doctor, Dr. Chappell of In2it Medical, to find out what was going on. Dr. Chappell performed an ultrasound and found a small tear in the Distal Biceps Femoris and the Lateral Collateral Ligament (LCL) around her left knee. This type of tear won't heal on its own, so medical intervention was required. Dr. Chappell recommended Platelet Rich Plasma (PRP) as the preferred treatment option.

Lindsey had the first of two treatment rounds this week. She is now recovering at home. She is still having some difficulty walking normally, but that will fade over the next few days. She will have the second treatment round in a couple of weeks. After her treatment, Keith took Lindsey to Chick-fil-A to help ease the pain. 🐔
Great Glizzy Gauntlet bike prep 🛠️ 🚀
Keith has started preparing his bike for the upcoming 100-mile (161-kilometer) Great Glizzy Gauntlet bike race.
The first step was to replace the bike chain. Keith installed a new SRAM Eagle X01 chain about a week before the start of the 2025 Tour Divide race. That same chain lasted through pre-race rides, the 2,700-mile (4,345-kilometer) race, and all of the riding Keith has done since. That's an incredible lifespan for a modern, 12-speed mountain bike chain. Even after all that use, the chain still passed the stretch test and barely had any signs of wear.

Keith installed a new SRAM Eagle GX chain just to be sure that he won't have any chain issues during the race. Keith opted for the lower-cost, GX model chain since the rest of his bike components are already worn and will need replacement soon. Once the cassette and chainring are ready for replacement, Keith will also install a brand new SRAM Eagle X01 chain so that all drivetrain components wear in evenly.

With the chain sorted, Keith moved on to reinstalling the Profile Design aero bar system that he used for the 2025 Tour Divide. These aero bars provide comfort and additional hand positions for long rides such as the Great Glizzy Gauntlet bike race. The aero bars will also come in useful should there be a headwind on the day of the race.
Riding around Utah Lake 🔁 🚵♂️
Over the past few weeks, Keith has been slowly rebuilding his distance riding endurance. This week, Keith wanted to push himself to ride a full 100+ mile (161+ kilometer) route. Keith chose to ride the Utah Lake loop route that he typically rides during the Christmas holiday break.

Keith woke up at 4:00 AM, got dressed, ate breakfast, and then headed out at 5:00 AM to start the route. Keith rode through the dark until sunrise finally occurred as he reached Saratoga Springs, on the west side of the lake. At this point, he stopped in the local Maverick gas station to have a snack and pick up a burrito for lunch.

Keith then rolled back out and headed south along the western shore of Utah Lake until he eventually reached Highway 6 on the southern end of the lake. This section is the most remote of the entire route. There are mainly farmlands and gravel pits in this area.

Keith then made his way around West Mountain and the Lincoln Beach area. This section is by far the most beautiful. The West Mountain provides a stunning contrast to the flat lake bed area. Also, there are plentiful opportunities to spot wildlife such as pronghorn, deer, hawks, and sometimes Bald Eagles.

The remainder of the route heads predominantly north-east towards the mouth of Provo Canyon. Keith added this section to the standard Utah Lake loop to increase the distance and elevation gain of this primarily flat loop. Upon reaching Provo Canyon, Keith returns home following his standard bike path route.
The overall ride was everything Keith had hoped for. Keith finished the 115-mile (185-kilometer) route with 1,375 feet (419 meters) of elevation gain in under 8 hours of riding time! 🙌 This was Keith's best performance on this route. This was a surprising result considering Keith battled a slight headwind for the vast majority of the ride.
