This week, Lindsey returned from her trip to Florida ποΈ, we celebrated our friends' birthdays at La Caille π½οΈ, and Keith started his final preparation for the upcoming WYO-131 gravel race π΅.

Lindsey's Florida Trip ποΈ πΉ
Last week, Lindsey and her mom were in Naples, Florida, for some girl time! They spent their days lounging by the pool or at the beach and their evenings enjoying some yummy food. They had plenty of time to reconnect and talked about every subject under the sun... and then some! There wasn't a planned agenda, and they took one day at a time, deciding what they wanted to do. Three days especially stick out to Lindsey: dinner at Seed to Table, lunch at The Turtle Club, and the dolphin cruise they took.

Seed to Table πͺ π½οΈ
Seed to Table is a unique grocery store with so much more. Besides the lovely aesthetic of the shopping options, Seed to Table boasts restaurants, bars, and live music! Lindsey loves unique grocery stores, so this was particularly appealing to her. Lindsey's mom has been there before and was excited to see her reaction.
According to the timestamps on Lindsey's photos, they spent about 1.5 hours exploring the store before enjoying dinner. π€£ Lindsey appreciated the perfectly displayed fruit and vegetables, even finding a few she had to Google because she didn't know what they were. The meat and seafood counters were also interesting to see all the options.
Lindsey and her mom planned to eat dinner at Seed to Table. They offer a variety of options: burgers, sushi, sandwiches, BBQ, tacos, pasta, pizza, etc., but the ladies chose to pick their own steaks from the meat counter, along with sides, as their meal. Lindsey reports the meal was absolutely delicious, especially noting the large flake salt that finishes the steak. They also enjoyed wine from the bar and ended up purchasing a dessert to take home for later. It was definitely a memorable night for both of them.

The Turtle Club π’ ποΈ
Lindsey and her mom aimed to find restaurants with a view, and The Turtle Club was perfection! They offer beachfront dining with tables in the sand, locally sourced seafood, and exceptional service. Both enjoyed a tropical cocktail with their meal while taking full advantage of the beautiful ocean view. This was another wonderful experience they got to share π

Dolphin Tour β΅ π¬
The best surprise of the entire trip was the dolphin-watching tour on Marco Island! Dolphins greeted them within the first 10 minutes of the boat ride, and dolphins were within sight for nearly the entire 2 hours. They ended up having a "private" tour since no one else was booked, a bonus of the off-season.
Elliot, the boat captain, taught them interesting facts about dolphins and the Ten Thousand Islands National Wildlife Refuge. Lindsey and her mom saw dolphins surfing the boat waves, a pod that might have been sleeping, and another pod hunting fish. It was an amazing tour and exactly what they were looking for!

Celebrating birthday dinners at La Caille π«π· π₯©
Our friends Brandon and Stephanie both recently had birthdays. To celebrate, we all went to La Caille, an upscale French restaurant, in Sandy, UT. We were very excited to finally get to experience this high-end restaurant.

La Caille is truly a memorable experience. The grounds contain multiple beautiful venues for you to enjoy. The restaurant itself makes you feel as if you are in a luxury home in France, and the dining experience was incredible!

The multi-course meal started with an amuse-bouche of salmon pΓ’tΓ© topped with salmon roe. For our appetizers, Lindsey ordered the beet & burrata salad while Keith ordered the chorizo arancini. Keith also had a cup of the lobster bisque, which was served with a side of caviar toast. Before receiving our main meals, we were served a small cup of raspberry sorbet, an intermezzo, to cleanse our palates.

After enjoying the sorbet, our main courses arrived! Lindsey had ordered the lobster romesco risotto, and Keith had ordered the duck breast. Both meals were elegantly presented and as delicious as they were beautiful. For dessert, Lindsey enjoyed an affogato, and Keith savored the delectable chocolate almond fondant.

After finishing our meals, we walked throughout the main building and along the grounds. Unfortunately, it was getting quite dark, so we weren't able to experience all that La Caille has to offer. Even in the dark, it was still quite beautiful. Hopefully, we will be able to return someday soon.
Keith started final preparation for the WYO-131 gravel race π΅ π
The WYO-131 gravel race is one week away! Keith has been busy putting together a race strategy for the 131-mile (211-kilometer) race, which includes 10,000 feet (3,048 meters) of elevation gain. Keith has also been working in a few last-minute training sessions to ensure that his legs and lungs are properly prepared for the demands of this race.

Keith expects the race to take somewhere between 11 and 13 hours to complete, assuming that the weather and road conditions are favorable. That's a long time to be on a bike, so Keith must be in tip-top shape before the start of the race. Keith is really looking forward to this race as it crosses one of his favorite sections of the Tour Divide route!
Keith had a gravel bike fitting done at Peak State Fit π π²
Keith has been wanting to purchase a proper gravel bike for about two years now. He currently only has his 2021 Intense Sniper T mountain bike, which he uses for all of his rides and races. The Sniper T is an amazing mountain bike, but it is often not the right type of bike for the long-distance road and gravel rides that Keith enjoys.
For those types of rides, a drop-bar gravel bike would be much more appropriate. A gravel bike is significantly lighter, faster, and better suited for less technical terrain where a mountain bike would be overkill. Before purchasing a gravel bike, Keith knew that he would need to get a bike fitting to ensure that he purchases a bike with the right geometry to fit his body.

Keith once again traveled to Salt Lake City to meet with Chris Yeager at Peak State Fit for a pre-purchase bike fitting on the Retul Fit Bike. After spending a few hours testing out various bike geometries, a clear winner surfaced: the Enve Mog! Now that Keith knows which bike fits his body, he is working with Chris to spec out a custom build with all of the components that he wants. Hopefully, Keith will be the happy owner of a new Enve Mog in the next month or so. π€
