This week, Lindsey checked out some coffee shops β, got a fancy new blanket βΊοΈ, and made a Turkish mosaic lamp πΉπ·. Keith spent some time working on his new mini PC π€ and finally got out on a much-needed bike ride. π΄ββοΈ

Coffee Shops and Christmas β π
It's not a secret that one of Lindsey's favorite places to visit is coffee shops. She took advantage of her work-from-home job this week and worked from one of her favorites, Elevated Grounds. This small shop is nearby, and she loves their breakfast sandwiches and lattes.

On another day, she needed to stop by Canopy's office to pick up her Christmas gift, so she first worked from The Honeysuckle Coffee Co., which she's only been to once, but it made quite the impression. The coffee is great, and the breakfast options are excellent. Some of the savory options include a small salad, and as odd as it is, that's the part she was craving. Since she would be there for a few hours, she also got the sugar cookie, and now that cream cheese icing is on her mind!

Canopy always gives great Christmas gifts. This year's Minky Couture "Monster" blanket was a real hit for Lindsey! She had just been saying that her current blanket isn't as soft, and she might need to replace it. This is a huge upgrade in softness, size, and overall feel of the blanket. She's been snuggled up on the couch every night since.

Keith started setting up his mini PC π» π€
A few weeks ago, Keith purchased a GMKtec K12 mini PC. He has been patiently waiting for some additional PC components to arrive so that he can set it up and start using it. The parts have all finally arrived and Keith was excited to install the additional NVME SSDs (storage drives).

Keith was able to finally "boot" the mini PC to verify that everything is working. π Unfortunately, Keith can't start installing the necessary software yet because he is still waiting on a remote connectivity device to aid in the installation. Once that arrives, he will be ready to start playing with this new toy!
Date night dinner at Di Napoli in Orem, UT π π₯
For date night this week, we decided to check out Di Napoli in Orem, UT; a new-ish fast casual Italian restaurant. The online reviews and photos of the food set our expectations sort of high, especially for a counter-serve restaurant.

The food was delicious and plentiful! π We started the meal by sharing a large Caesar Salad. Lindsey ordered the Fettuccini Alfredo with grilled chicken. Keith ordered the Chicken All'Arrabiata, a spicy chicken dish with spaghetti noodles. We both thoroughly enjoyed our meals and the included toasted bread was quite scrumptious. The only downside to this restaurant is that it is a little expensive for being counter-serve.
Keith's "Christmas Spirit" bike ride ππ΄ββοΈ
We chose not to ski again this weekend due to the high winds, low snow, and generally dismal mountain conditions. This turned out to be the right decision after checking in with our friends that chose to ski. They all said that conditions were miserable and they didn't ski for very long.

Instead of skiing, Keith decided to go out on a bike ride to enjoy the nearly 60Β°F (15.6Β°C) weather. He rode part of his regular training route and he was excited to see all of the Christmas displays along the way.

Keith hasn't been on his bike much over the past couple of weeks due to a higher-than-normal workload at his job. Hopefully, Keith will be able to spend more time biking during the company holiday shutdown between Christmas and New Year's Day.
Turkish Mosaic Lamp πΉπ· π¨
Lindsey and her friend attended an Art Masterclass event to make a Turkish Mosaic Lamp this weekend. The class lasted about 2.5 hours and took them through the steps of choosing a design, attaching the mosaic tiles to the glass globe, and then filling in any blank space with beads. The final steps were done at home after the glue had fully dried.

Lindsey wasn't so sure about her lamp until the steps of applying the plaster and assembling the lamp to turn it on. Once it was lit, and she saw the final product, she was super happy with the results! She doesn't consider herself creative or artistic, but this sure made her feel more confident in an art project.
