This week, we checked out a local Mexican/Salvadorian restaurant, Keith continued with his workouts, and we spent the weekend skiing with our friends Chris and Doug. ⛷️ πŸ™Œ

Lodging on the Camino: From Hostels to Hotels
Keith and I enjoyed the various and inexpensive options for lodging along the Camino de Santiago. Each night was a little different and offered different amenities.

Salvadorian dinner πŸ‡²πŸ‡½ πŸ‡ΈπŸ‡»

Lindsey's manager recently suggested that we check out a local Mexican/Salvadorian restaurant called El Mexsal in Orem, UT. We both love authentic Mexican food and we were both excited to try El Salvadorian food so this was the perfect date night option for us. ❀️

We each ordered the Revuelta Pupusa (flatbread stuffed with cheese, beans, and pork) along with our main meals. Lindsey ordered the Yuca Frita (Yuca fries smothered in delicious beef cubes) and Keith ordered the Pork Chile Verde (Keith's favorite Mexican dish). Both of our meals were very flavorful and delicious. The Pupusa was a great accompaniment to these excellent meals. We both enjoyed the meal so much that we are already talking about going back again. πŸ˜‹

Keith's workouts πŸ‹οΈ πŸš΄β€β™‚οΈ

Keith has continued with his weekly weightlifting and riding workout plan. Over the next two weeks, Keith will begin to transition back to significant bike riding and less weight lifting. It's hard to believe that Spring is just around the corner. Keith has just over three months to get into "bikepacking shape" again before we head to Canada for the start of the Tour Divide.

Keith is playing it smart this year by slowly transitioning back to riding. Keith has hit, for him, solid weightlifting goals that should pay dividends to his overall health and cycling ability. Time will tell if all this hard work has paid off. 🀞 During this transition phase, Keith will no longer continue to increase the weight he is lifting during his workouts. Instead he will consider these weights his "max" and use these weightlifting sessions to continue to build his tendon resilience and maintain his base strength.

This approach will ensure that he doesn't overwork his body as he transitions towards more and more riding. Next week, Keith plans to kick off his riding with three, back to back days of 20-30 mile (32-48 kilometer) rides. These will be great transition rides since the weather is supposed to be beautiful all week! 😎

Weekend of skiing with Chris & Doug ⛷️ πŸ”οΈ

Our friends Chris and Doug were back in town this week on their semi-annual ski trip to Snowbird! This year marked the 5-year anniversary of us meeting them through our YouTube channel. πŸŽ‰ It's so hard to believe that it has already been 5 years!

Saturday skiing ⛷️ 🌞

We met up with Chris and Doug on Saturday morning at Snowbird to kick off our weekend together. Saturday was a beautiful bluebird day and we took full advantage of it by exploring the majority of the mountain. We stopped for lunch at the Atrium in the Cliff Lodge before wrapping up the remainder of the afternoon skiing. We then headed to the outdoor hot tubs to relax for an hour or so before our dinner reservations.

Dinner at The Steak Pit πŸ₯© πŸ˜‹

After fully relaxing in the outdoor hot tub, we all got cleaned up and made our way to The Steak Pit for dinner. The Steak Pit is Snowbird's fine dining, on-mountain steakhouse.

Our meal was absolutely incredible! Lindsey ordered the 16oz Ribeye Steak with a loaded potato as her side. Keith ordered the Pan Seared Scallops with a side of asparagus. We all shared a few of the sides including some amazing mushrooms and lobster mac & cheese. This was such a fun and relaxing way to catch up with our friends and enjoy a great meal together.

Sunday skiing and saying goodbye 😒 πŸ‘‹

On Sunday, we headed back up to Snowbird to ski with Chris and Doug again. I think we were all a little tired from the day before but we didn't let that stop us from having another incredible day on the mountain.

Doug and Keith went on some adventures together! They hiked the High Baldy Traverse to hit "Fields of Glory" and "Thanks for the Memories" chute. This is a double black diamond (experts only) run which starts with a long, open field that drops into Snowbird's Amphitheater freeride area. Keith and Doug opted to take the Thanks for the Memories chute (a narrow, steep, and icy chute) as their exit option.

We all enjoyed ripping the groomers throughout the day. The sun never really poked out like it was supposed to which left a lot of the off piste runs sort of chunky and difficult to ski. Chris was rockin' his 50th anniversary Snowbird vest which has now become a staple of their visits. He definitely had the right idea as it was quite warm on the mountain. It felt a lot like Spring skiing.

Eventually, the day came to a close and we all made our way back up the Chickadee Lift to our respective exits. We all hugged and said our goodbyes. While we were planning for the drive home, Chris and Doug were heading to the rooftop spa to enjoy some relaxation in the hot tub, pool, and eucalyptus steam room... before their scheduled 90-minute massages! What a life! These guys know how to live it up on vacation.

Preparing for our next guests 🏠 🎿

Next week, we have our next guests arriving... Lindsey's cousin Brooke and her fiance will be visiting us while on their ski vacation to Utah. Brooke last visited us with her family a few years ago. They will be staying with us for a couple nights and we hope to all get to ski together at least once during their trip.
