This week was another busy one! π We ate some amazing food π, enjoyed a bluebird day on the slopes β·οΈ, and Keith took care of some much-needed car maintenance π§.

Sushi night at home π£ π‘
Lindsey attended a work-lunch this week and the restaurant that they went to was very close to H Mart, an amazing Korean supermarket. Lindsey was excited to browse the aisles of H Mart to try to find some "unique eats" for us.

Lindsey purchased a few standard sushi items along with more unique items such as Korean vegetable pancakes, squid heads, glass noodles, and a Korean sandwich cookie with chocolate spread. Everything was very delicious and it was fun to have a meal like this at home.
Coffee flight and empanadas at Guayoyo Cafe β π₯
Lindsey has been super excited for us to have breakfast together at Guayoyo Cafe in Pleasant Grove, UT. This week, we finally had time to head there before the cafe got too busy.

We ordered the coffee flight which included matcha, mocha, caramel, and chai flavors along with a small cookie for each drink. We also ordered two of their savory empanadas along with a massive cinnamon roll! π Everything was delicious and we left full and happy!
Homemade seafood Pho π π
While Lindsey was at H Mart, she picked up the ingredients needed to make homemade Pho. Lindsey decided to make a seafood Pho which included octopus, squid, clams, and other various seafood elements.

Keith loved the seafood Pho but Lindsey said it was a little too "fishy" for her liking. Lindsey likes seafood, but isn't a huge fan of more adventurous seafood such as octopus and squid. It was still fun enjoying a unique dinner like this at home.
A bluebird day at Snowbird β·οΈ π
We only skied one day this weekend and we picked the perfect day! The weather was beautiful, with a crisp air temperature and plenty of sunshine all day. π We met up with our friends Brandon, Stephanie, Anna, and Anna's friend Zack.
Unfortunately, Brandon had a major problem with his skis. The entire binding and top sheet delaminated from the base! π± Thankfully, he was able to discover before it caused him to crash. So, Brandon and Stephanie had to head home early.

We spent the remainder of the day skiing with Anna and Zack. We made lap after lap of some of our favorite intermediate runs including "Chip's" and "Bananas" π. Keith also took Anna and Zack along the "Bookends Traverse" in Mineral Basin to hunt for some soft snow, and they found it! π All in all, it was a great day skiing with friends at Snowbird.
Mediterranean lunch at Spitz π§ π₯
After skiing over 20,000 vertical feet (6,096 meters) over the course of the day, we were both starving! So, we decided to stop for lunch at Spitz Mediterranean Street Food in Draper, UT.

Spitz offers delectable Mediterranean bowls that include falafel, lamb, and other assorted proteins. The bowls were as filling as they were delicious and we were both very happy to have refueled after a long day on the slopes.
Much-needed maintenance on our Toyota Highlander π π§
Lindsey's 2016 Toyota Highlander has been making a few annoying squeaks and squeals for a while now. These sounds get even louder in the winter when the vehicle is cold. So, Keith finally built up the energy to tackle some of these issues.

First up was replacing the whining blower motor in the dash. Keith initially thought this would be a very difficult procedure and that he would have to disassemble a major portion of the dashboard. Thankfully, that wasn't the case and it only took about thirty minutes to replace the blower motor fan. While he was working in the dashboard, he also replaced the cabin filter.
Later that evening, Keith tackled the annoying job of cleaning and lubing all of the rubber seals around the doors, sunroof, and rear hatch area. Utah's environment is very dry and dusty which results in significant squealing and creaking of automative seals if you don't maintain them properly.
