This week, Lindsey and Tiffany wrapped up their trip to Redfish Lake near Stanley, Idaho. We then gave Tiffany a whirlwind tour of the Salt Lake City area before she headed back home to Indiana. Oh, and happy 17th wedding anniversary to us! 🍾 🥂 🥳

Wrapping up the Redfish Lake trip ⛰️ ❄️
Lindsey and Tiffany wrapped up their trip to Redfish Lake in Idaho this week. They both had a blast exploring the area including stopping at several hot springs, enjoying delicious local meals, and hiking near the majestic Sawtooth Mountain Range.
The weather during this trip was unexpectedly cold and it even snowed while they were up there. 🥶 Thankfully, the weather didn't put too much of a damper on their plans. You'll have to settle for a few more pics from this trip until Lindsey has had time to create a full post.

After their trip to Redfish Lake, Lindsey drove Tiffany back to our house to spend the next few days with us. Tiffany has never been to the Salt Lake City area so we were excited to show he our home and the beautiful landscapes that surround it.
We have sort of a standard route that we take new guests on to show them some of the highlights throughout the Salt Lake City area. The itinerary, shown below, is jammed pack so it takes nearly an entire day to drive the loop and return to our home.
- Leave our home in Orem, UT, and grab breakfast and coffee as we make our way towards Draper, UT.
- Drive up Little Cottonwood Canyon to see Snowbird and Alta ski resorts (optional: ride the Snowbird Tram to the top of Hidden Peak).
- Drive up Big Cottonwood Canyon to see Solitude and Brighton ski resorts.
- Drive over scenic Guardsman Pass and make our way past Deer Valley ski resort to Park City.
- Visit the Utah Olympic Park and Alf Engen Ski Museum in Park City, UT.
- Visit Midway, UT and Heber, UT as we make our way to Sundance Mountain Resort.
- Drive scenic Provo Canyon to visit Bridal Veil Falls and eventually return to our home in Orem, UT.
Needless to say, we think that Tiffany was blown away by the breathtaking scenery and countless activities to do in our area. Tiffany was only able to stay with us for a few days so we hope she is able to return sometime in the near future. We have so many more incredible things to show her in our beautiful state!
Update on Keith's physical therapy 🏋️ 🚵
Keith's physical therapy for his patellar tendon is coming along very well. His physical therapist is impressed by his dedication to the program and his progress thus far. Keith has now been cleared to start heavier weight lifting and return to light mountain biking.
Keith still needs to be cautious as he returns to long-distance cycling and mountain biking. His patellar tendon is still healing and it will take at least a few more weeks for it to fully heal. Also, due to the major adjustments from his recent bike fitting, Keith needs to be extra cautious to allow his body time to become accustomed to its new position on his bike. Even with all these caveats, it is very comforting to Keith to start to feel like things are returning to normal.
Our 17th wedding anniversary 🍾 🥂
This Sunday was our 17th wedding anniversary!!! 🥳 It's hard to believe that we have been married for 17 years already. We decided to keep the celebration low-key this year since we were recently on a trip to Gulf Shores, Alabama and Lindsey had also just returned from a trip to Redfish Lake in Idaho.
To celebrate, we headed out to South Jordan, UT to have lunch at Sukihana Japanese Cuisine. Our lunch was amazing and we were able to get a glimpse at some of the massive homes within the surrounding Daybreak community.
We then drove to the recently opened H Mart (a Korean grocery store) in West Jordan, UT. We didn't take any pictures inside because the place was packed. Also, the pictures wouldn't do it justice since it sort of looks like a standard grocery store until you look closer and see that nearly everything in the store is of Asian origin. We picked up a few essentials to cook a Chinese Hot Pot meal later this year, once the outside temperatures cool down a bit. 🥵 We also bought a few unique items such as coffee candy and Mochi desserts.
