We spent this week with Lindsey's cousin, Cara. Lindsey and Cara hit the slopes, lived it up for Cara's birthday, and checked out the local attractions. We were so excited to spend time with her again. It's been way too long!

Food on the Camino: Highlights and What to Expect
Food was one of the major attractions for walking the Camino de Santiago. Lattes, pastries, cured meats, cheeses, seafood, and the opportunity to try new thingsβ€” this is what my dreams are made of!

Celebrating Cara's birthday πŸŽ‚ πŸŽ‰

One of Lindsey's favorite places to relax is the Cliff Spa at Snowbird so she was thrilled when Cara wanted to spend her birthday there. They arrived at Snowbird and enjoyed breakfast at the Atrium before heading up to the rooftop for yoga and a pool day. The Powderbird Helicopters were quite active transporting heliskiers during the morning. It's quite a surreal experience to be on the roof of the Cliff Lodge sitting in a hot tub while watching helicopters fly around and skiers enjoy the mountain terrain!

To wrap up Cara's special day, they had a delicious dinner at the Steak Pit, the mountainside steakhouse at Snowbird. The meal started with bread and a fresh salad. For dinner, Cara enjoyed sea scallops while Lindsey ordered the ribeye. They each ordered the baked potato side. Lindsey learned from her last visit to the Steak Pit to order an additional side to share, lobster mac and cheese.

The food was amazing, but the highlight of the night might just have been a visit from "Larry," the porcupine. Lindsey and Cara were seated right next to the window when Larry made his appearance and began to beg for bread. This is a regular occurrence and the staff were just as excited to see Larry as the patrons of the Steak Pit were. It was a magical way to wrap up Cara's birthday!

Skiing Alta with Cara 🎿 πŸ”οΈ

Cara's last Utah skiing experience was during her family trip in 2019. During that visit, she skied Solitude and Powder Mountain. Lindsey and Cara decided to spend the day skiing at Alta to add to Cara's list of Utah resorts. The Utah terrain is much more difficult than the resorts Cara is used to skiing.

Alta offers the perfect beginner area which is accessible from the Albion Base. This beginner-focused area offers skiers a relaxed environment to practice their technique and enjoy the amazing mountain views.

Slowing down and relaxing with Cara πŸ“– 🌱

After four days of a packed schedule, Lindsey and Cara decided to slow down a bit and enjoy a more relaxing itinerary. As noted last week, both are extreme planners so these days were still filled with things to do and places to visit. They drove up American Fork Canyon to Tibble Fork Reservoir, stopping to look at some of the amazing (and quite large) homes in the Alpine, UT area.

They both tried Swig, a local soda shop chain, for the first time and raved about the mini chocolate chip cookies. The cookies are half-baked and tasted like cookie dough! πŸͺ They visited coffee shops, cafes, bookstores, and shopped for plants. They drove to Vineyard Beach and Utah Lake. Keith was able to join Lindsey and Cara for an amazing dinner at Little India in American Fork, UT. We also made homemade pizzas together. πŸ•

It was such a special time to reconnect, catch up on each other's lives, explore new places together, and share with Cara some of our favorite local areas. Lindsey is always sad and grumpy when family leaves, but she did a good job with really enjoying every minute she got to spend with Cara. We are so thankful Cara chose to spend this time with us, especially to celebrate her birthday in Utah.

It's always hard to say goodbye to our visitors and Cara was no exception. We both really enjoyed catching up with her and spending so much time together. We can't wait until we all get to reconnect again.

Keith's training update πŸ˜… πŸš΅β€β™‚οΈ

Even with our packed schedule with Cara, Keith still managed to fit in quite a few workouts this week. Keith squeezed in over 90 miles (145 kilometers) of riding with nearly 5,000 feet (1,524 meters) of climbing. Keith also completed one full body workout along with several, physical therapy focused maintenance workouts. The Tour Divide is only 3 months away so it is important for Keith to stay focused on his training regimen.
