Keith and Lindsey spent time in Oro Valley following Keith’s completion of the Tour Divide. This was a time of rest and exploring the area before returning to Utah.

Ski trip to Red Mountain in Rossland, BC πŸ‡¨πŸ‡¦ 🎿

We had an amazing ski trip to Red Mountain Resort in Rossland, BC with our friends Chris and Doug! Red Mountain has some of the most challenging and playful terrain that we have ever seen. The snow conditions weren't great because Canada has been facing similar low-snow conditions as we have here in Utah. However, we still found plenty of fun, challenging terrain to enjoy on this trip.

Dumplings on the way home πŸ₯Ÿ 🍜

We were both starving on our way back home from the airport, so we decided to stop at The Dumplings Company in South Salt Lake City, UT. We have heard good things about this restaurant and we were surprised to see that they offer a lunch buffet that allows you to sample several of their dumplings and side dishes.

We both ordered the lunch buffet and everything was delicious! Being a buffet, we both definitely ate too much. However, it was the perfect way to experience the vast array of dumplings, sauces, and sides offered. The dumplings are Nepalese-style which gives them a different chew than traditional Chinese dumplings. Also, the dumplings were mostly filled with falafel which made for an interesting experience.

Lindsey skied at Snowbird ⛷️ πŸ”οΈ

On Saturday, Lindsey headed up to Snowbird to meet up with some of our friends to ski. Unfortunately, Keith wasn't able to join in the fun because he was stuck at home on a L2 Support rotation for his job. πŸ˜”

Due to the recent snow storms this week, Lindsey had to leave our home super early in order to beat the canyon traffic. On the plus side, she arrived early enough to treat herself to breakfast at The Atrium in the Cliff Lodge. β˜• πŸ˜„ Lindsey said that the snow was pretty chopped up but still way better than it has been so far this season. The lines were also crazy long with all of the skiers eager to get some tracks.

Delicious Mexican food for date night πŸ‡²πŸ‡½ πŸ˜‹

For date night this week, we checked out El Gallo Giro in Orem, UT. This unassuming Mexican restaurant has 4.8 ⭐ on Google Reviews so we knew that we would be in for a treat.

Lindsey ordered the Cabo Combo, which included a delectable assortment of seafood and Mexican sides. Keith ordered the Alambre, which included an amazing selection of Mexican-inspired meats. Both of our meals were fantastic! We also left with enough left over to have a second meal each. El Gallo Giro is definitely a hidden gem in Utah County.
