This week, Lindsey returned from her Indiana/Florida trip 🛬 and we started planning a 2026 ski trip with our friends Chris and Doug! 🎿

Lindsey is back! 🛬 🏡

Lindsey is finally back home from her trip to Indiana and Florida. Keith was so excited to see Lindsey again. It's been an unusual year being apart from each other so much. We have been apart for nearly 6 weeks this year between Keith's 2025 Tour Divide race and Lindsey's trip to Indiana and Florida.

Lindsey's return flight wasn't without drama. Keith planned to pick Lindsey up from the Salt Lake City International Airport at around 9:30 PM. Unfortunately, Lindsey's departing flight from Cincinnati, OH, was delayed multiple times. This resulted in her arriving in Salt Lake City after midnight! 😫 This meant we would not arrive home until after 1:30 AM. Let's just say that it was a rough morning for both of us the next day.

Ski trip planning 🇨🇦 🎿

For the past few years, we have been trying to plan a ski trip with our friends Chris and Doug. These two plan a ski trip together nearly every year. Every other year, they travel to Snowbird in Utah, which means we get to ski with them. 🙌 On the non-Utah travel years, we don't get to see them. 😔

So, we have been trying to find a time that we could all travel together to a new (to us) ski resort. The last few years didn't work out due to Keith's Tour Divide race and training schedule. However, this year is finally the year to make this trip happen!

Over the past two weeks, we discussed several different ski resort options that we may want to visit. The short list included Taos, Big Sky, Whitefish, Sun Valley, Steamboat, Telluride, Red Mountain, etc. After evaluating the mountain stats, resort amenities, costs, and accessibility, we decided on Red Mountain Resort in Rossland, British Columbia, Canada. 🇨🇦

Red Mountain Resort offers world-class advanced/expert terrain as well as a large amount of intermediate terrain. The resort also has nearly ski-in/ski-out accommodations at a fraction of the price of similar resorts in the United States. We have officially booked our stay and purchased our plane tickets! We can't wait to finally all go on a ski trip together!

Date night at Haku Ramen House 🍜 😋

For date night this week, we headed back to a local favorite ramen spot, Haku Ramen House in American Fork, UT. This is a tiny restaurant, but it serves delicious ramen and amazing Chashu (pork) buns.

We shared an order of Chashu buns and Takoyaki (Octopus pancake balls) as an appetizer. The Takoyaki was delicious, but Keith almost severely burnt the inside of his mouth on the first bite. The deep-fried appetizer was incredibly hot (temperature, not spicy), and Keith didn't realize it until it was in his mouth. Luckily, he did not end up burning his mouth.

For our main meal, we each ordered a bowl of the Haku Ramen. The ramen was delicious as always. It has the perfect level of salty/umami flavor that keeps you coming back for more. 😋 It was so nice to be able to sit and share a meal again after being apart for the past couple of weeks.
