Lindsey's health scare π©ββοΈ π¨
Lindsey has been dealing with some swelling in her leg ever since she had the initial round of PRP injections a couple of months ago. Based on communication with the doctor who performed the injections, we were all fairly certain that the PRP treatment was not the source of the swelling. However, we have been struggling to nail down the root cause...
This week, we finally discovered the source of the swelling... it is a rather large blood clot in her upper leg! π¨ Lindsey was diagnosed through non-invasive imaging. She has since started an initial course of blood thinners to help restore normal blood flow to her leg and allow it to begin the natural healing process of breaking up the blood clot. Lindsey will meet with a hematologist in the coming weeks to determine whether additional treatment beyond blood thinners is required.

This is a scary diagnosis, but we are both glad to finally understand what has been causing the swelling in Lindsey's leg. Now, we can begin the healing process and start to get back to our normal lives.
Date night dinner at Sam's Kitchen π¨π³ π
For date night dinner this week, we drove to Sam's Kitchen in Sandy, UT. This restaurant is more of a cafeteria, located within the Ocean Mart Asian grocery store.

We started our meal with a Char Siu (BBQ pork) Bun appetizer. The buns were the perfect combination of chewy and delicious. The pork itself was so flavorful! π For our main meals, Lindsey ordered the Char Siu with Noodles combo, and Keith ordered the Roast Duck with White Rice combo. Both of our meals were incredibly flavorful and delicious. Everything from the lightly sauced noodles, perfectly roasted meats, and smoky grilled vegetables was exquisite!
This is truly an unassuming restaurant that most people would walk away from at first sight. However, if you give it a chance, you will quickly find that the staff is incredibly friendly, the prices are very reasonable, and the food is outstanding! We are both already looking forward to going back sometime in the near future.
Keith's indoor training sessions π΄ββοΈ π
Due to Lindsey's health scare, Keith didn't want to leave Lindsey alone for any length of time this week. π« We were both concerned that Lindsey could potentially require immediate medical attention until Lindsey was successfully onboarded onto the blood thinners.
So, instead of going on outdoor adventure rides, Keith decided to use this week as a means to focus on dedicated, power-building efforts on his indoor trainer. Efforts such as this will pay off for his upcoming gravel races later this summer.

All in all, Keith was able to complete 4 solid training sessions this week. Keith covered a total virtual distance of 116.5 miles (187.5 kilometers) with a total virtual elevation gain of 9,308 feet (2,837 meters) of climbing! Not too bad for a fully indoor week.
